Former server here, tip is baseline 20%, prices go up, cost of living goes up, tip should go up too and you don’t take off the tax because the server still has to include tax when they are doing tip outs (what goes to other people in the restaurant, hosts bussers bartenders )

You should tip on tax because the servers tip is also taxed.
