Improved Super Juice

I was initially going to do a video on Counter Pressure Bottle Filling, however I had a few "learnings" while doing it. The first, is that while figuring out the counter pressure system, I released all the CO2 from the keg, which wouldn't be a big deal except it was sitting around 2°C (36°F) and that pressure released caused a rapid cooling of the keg, enough to turn all of the water into ice. You could actually hear the ice forming in the keg!

When carbonated water freezes (at least at low pressures) it releases all the absorbed CO2, so yes I decided to leave the room temporarily as a rapid pressure increase and water expansion during freezing could have compromised the structure of the keg. The good news is that everything held together, the bad news was that I'd need to dethaw and re-carbonate the water, which was going to take a few days, hence delaying the video.

Then as I was pressurizing the keg, I ran out of CO2, and getting a CO2 cylinder filled takes a week or two because the place I get that done sends the cylinders out in batches to a third party for filling.

That's why there is a video on Improved Super Juice and I will get the Counter Pressure video done, once I have a properly carbonated keg of water to work with again. But this is a good video if you want to understand why super juice works and it does relate to essential oil content and acidity, so if you've watched my previous videos on the subjects, you'll get this.

Filtration Equipment

Here is a list of the vacuum filtration equipment I use, it is available on Amazon (I'm not an associate so this just an easy place to get the equipment). I've listed the 500 mL sized filter funnel, but I use the 250 mL normally. The size will just depend on how much you intend to filter. Just make sure your flask is twice the volume (or larger) of the filter funnel, you have the proper filter paper (diameter) and they use all the same connection sizes (24/40 is the most common).

Hello João and welcome. There are a number of factors that affect shelf-stability: oxidation is one and fermentation by yeast or bacteria is another and then there are other chemical reactions. For example, the main issue with citrus juice is that one of the key flavour compounds, citral, undergoes chemical changes when stored in a low pH environment, like citrus juice, to form a compound with an unpleasant piggy aroma called para cresol. Pepsi Co. has looked into this as well, and they filed a patent back in 2003 on things that help; the patent has expired,, so you can give it a read and use some of the advice in it, if it helps. It mostly deals with lemon/lime flavoured soda, but the goal of the patent is to prevent the "lemon/lime flavour degrading under such acidic conditions, thereby causing diminished flavour and off-tastes." https://patents.google.com/patent/US20040022921A1/en Give it a look a see if anything in it helps. Great video! I am new here and I am trying to increase the shelf stability of lemon juice for drinks. I have an industry that offers this kind of solutions to bars and restaurants that have no time or resources to do it by themselves. Is it possible to increase shelf stability up to 6 to 12 months? Either by using preservatives and/or pasteurization? My concern will always be related to the taste. Sensorial shelf stability for lemon juices is always a problem. I need to find a way to solve it keeping as much quality as possible if comparing to a fresh lemon.

There are many terpene suppliers, like Gold Coast, Abstraxtech and Cannterp. Most terpenes are identical and don't represent a GRAS issue. If they can be inhaled, they can be put in drinks. Terpenes are kind of self-regulating because they are practically insoluble in water.

Good video ! Going to try out a few of the adjustments mentioned. Nice to know the oleo step isn't necessary. Where do you source terpenes ? Is it one of the suppliers you've mentioned on the past lists? Are terpenes an ingredient where one needs to pay attention to the source/quality or are most are identical ? Cheers
