How to Prototype a Flavour

There is an easy way to combine flavours without making hundreds of litres worth of flavour essence. In fact, with this method, a few drops of your flavour compounds can be used many times over to combine aromas and prototype a flavour combination before you invest in making an essence.

The way to do it, as this video will demonstrate, is to create 1% solutions of your flavour compounds and then use scent test strips to combine the flavours. This method gives you a rough approximation of what the end result will be, though it may require refinement. The best part is that you can combine a dozen different flavours and get an aroma profile while spending only pennies to do so.

Thanks. The use of 65% limits the amount of terpenes that will dissolve. Using 94% will pretty much dissolve all the terpenes and the moment you add that to water of syrup it will become hazy and the terpenes will form an oily layer as they have no solubility in water. At 65% you'll still get some, but it is more manageable.

Great video! Related question: When making essences, what is the impact of ethanol content, e.g. why do most of your recipes call for 65% ABV and not 94%?

Glad it helped and yes, diluting essential oils will get them to a level more closely associated with what we normally experience when drinking/eating them.

This is immensely helpful—I just spent a good chunk of the evening with droppers and vials getting these together. Question: do you recommend working with essential oils in similar dilutions when prototyping flavors, or just the single flavor compounds?
