As for Caroline knowing about them being vampires, I recall in the early episodes where she was trying on dresses and Damon was getting her to invite him to the Founder's party so he could retrieve the crystal that she asked if the bites on her would turn her into a vampire and he explained the process was more involved than that. Whether or not he compelled her to forget that was not shown.
