Elena wants to make all the decisions - doesn't want Damon/Stefan doing it for her. She's an idiot with no understanding of how her actions can impact others. Leaving Jenna out of the loop is not keeping her safe in the long run. She needs to know what is going on so she can be vigilant.

Stefan can sense when it's Katherine vs Elena, but it's not automatic because it's not that obvious. And they do have heartbeats as well so he can't listen for that either. I can't get specific without referring to episodes you haven't seen yet but it is made very clear that they have heartbeats. π
