To elaborate a bit further on the Avatar cycle, it's Water>Earth>Fire>Air. It was mentioned before but this is the order into which nation the Avatar gets reborn (So after Aang there will be an Avatar from the Water tribes, after that one from the earth kingdom etc.). This is also the order in which the Avatar traditionally learns the elements, starting with their own (so a water avatar, after mastering water bending, would first learn earth, then fire and lastly air). Of course for someone who's watched ATLA several times since childhood this is obvious but the things hinting at that fact are somewhat subtle

Since it's not really elaborated on further, the reason Jeong Jeong tells Aang to master water, then earth, then finally fire is because that's the avatar cycle. The avatar cycle was first mentioned in episode 3 I believe, and as you can see in Aang firebend this episode, it's not a hard rule. It's just usually easier for the avatar to learn the elements in the order of the avatar cycle. Also, this episode introduced a new concept, subcategories of bending. Healing being a subcategory of waterbending.
