Not exactly an emulsifier but I started using xanthan gum a couple years ago and it's great.
I also use it to stabilize and thicken my overnight muesli and different sauces.
My sis also used it once to make beurre blanc with only very little amount of butter and plenty of xanthan gum, you wouldn't tell the difference.
