I got my bones from a local butcher shop, and surprisingly, the owners do not eat bone marrow! They said "you eat these??" and when I explained how I cook them, they wrote down my Youtube channel's name so they could watch this video. I'm excited for them to try marrow. It's crazy to me that the owners of a butcher shop have not tried it!
I glossed over this by saying how bone-soakers like to soak out the "impurities", but I've also heard people say that they do it to rinse off the "blood". The thing is... you're not gonna see anything still red after they've been roasted at such high temperatures. I'm not super anti-soak, but it's just more time, more dishes to wash, and more chances for cross-contamination
If you buy cross-cut bones, you can just poke the marrow through using a little spoon. Unfortunately, you wouldn't be able to use it as a luge.
This salad is essentially a chimichurri sauce, but with like 60% less olive oil.
Bone marrow is like catnip for dogs. They go insane over the smell. I don't let Grandpa eat cooked bones because they can splinter easily (yes even femurs, yes even if only roasted for 15 minutes). I scraped out a portion and fed it to him as a high-value treat. He was acting insane all night, snapping to action with every "come" or "sit" command I gave him.

FYI if you have Vegan friends, Halloween is a great time to buy fake plastic bones, fill them with beyond meat and serve them an alternative that they can immediately take home because they're not welcome at your beef marrow extravaganza.
