I'm glad it didn't come down to me making my own recado negro, but it was getting close. I gathered the ingredients as well as a manual grinder, but watching videos of people breathing in that spicy air had me quaking in my chanclas.
You could watch this whole video and then say "actually, the waiter was right and your first hunch was going in a good direction", and you'd be right. The three things I messed up on that attempt were not charring the ingredients to oblivion, not soaking in water to remove the acridity, and not grinding it into a fine powder.
You might not make the starring dish at home, but you should try your hand at making salsa macha. There's no one specific recipe, but as long as you toast nuts and chiles in oil and blend it chunky, it'll be great. Try it on tacos or grilled meat or in any way you'd use lao gan ma.

I remember hearing somewhere that eating burnt/charred food increases free radicals in the body and therefore increases cancer risks. Now I know you’re not eating this regularly because of sourcing the main ingredient but I’m curious how this affects people who consume this regularly. It’s like 50% crushed up burnt food. Haha looks good though and I’m gonna look for some of this chilmole.

Speaking of el yucateco whenever I am on vacation I stock up. You can get bottles of hot sauce at the Walmart in Mexico for 60 70 cents a piece versus four or five bottles here in the States.
