I don't think I've ever planned a video far enough ahead to post it according to a holiday, but it just so happens that the party I threw led to this video going up right before Cinco de Mayo. Out of all the culturally significant and/or food-focused holidays, THIS was the one??? I'm shakin my dam head.
I'm not one to know much about the delicate differences between various cuts of beef, but boy howdy does the fat on this arrachera taste so profoundly delicious when grilled over wood.
Down here, the way you treat markets is you shop around hunting for the one you like most and stick to it. Every Christmas, SOMEONE insists on bringing over some masa for tamales from a new place, and every single year my grandparents complain that nobody beats the prepared masa they buy. It's not uncommon to see people taste every new in-house asada marinade in the same critical way.
That black salsa was so good. It was my first time burning all the components over the Yoder instead of a charcoal grill or broiler, so it picked up a lot more smokey flavor. I also added a bit of activated charcoal powder to make it look more dramatic, but that's only because I have a huge container of it from a super old video.
