You can't even get an anonymous SIM card in EU countries like Germany any more. Carriers will only activate it after you have presented a valid ID. And it's not like show your ID to the nice girl at the counter for a second. No, they require pictures (front and back) of your ID taken with the phone and a short videocall to compare it to your face. Alternatively the shop has to scan the ID, send it to the carrier and sign that they have checked it was you who bought it. It's not about them reading your name off the ID. They want hi-res photos or scans to check the safety features and the serial number against some database for validity.
In a shady cellphone repair store they may sell you pre activated cards (aunt Aisha provided her ID) for a little premium.

I have a few things to add to this video for readers.
Gonzalo described the process of buying a random smartphone/burner phone with cash and setting it up with a fake account. By how he described it I would like to add that this is absolutely not an anonymous nor complete process, albeit it seems that way, and that if you want anything near anonymity you're going to go quite a bit further in securing this.
Practically, this boils down to using a custom ROM, like CalyxOS (recommended) or GrapheneOS. These are different operating systems for your smartphone, put simply. If you want more information about these ROMs and how to install them on new devices, look up their websites. For more practical info look up the YT channels Techlore or TheHatedOne. These will help a lot with regards to the privacy/security aspect of tech.
I can lastly strongly recommend Edward Snowden's Book Permanent Record. Amazing story which will explain the length to which he had to go to execute his role of whistleblower successfully.

I'm the same way with Facebook. I think having a LinkedIn is a good balance. You're technically on social media but it's all career focused so people can still technically look you up without knowing anything about your values or politics (although it's shocking how political and personal some people are on LinkedIn, truly cringey sometimes).

Problem is individual sites still ask for phone verification even if your account is legacy. All the more so if they see you're using VPN or the onion browser.

As an expert/power user with technology like this, I'll give you my advice
1. Use Linux instead of Windows if you can (Linux Mint is the most Windows-like one, ElementaryOS is more mac like). It collects far less data than Windows does. The problem is, software support isn't as good. There are usually alternatives, but heavy gaming and premium creative apps like Photoshop/Vegas Pro won't work and you'll have to use alternative apps. You can also dual boot Windows and Linux and only use Windows for specific apps.
2. There are private search engines even though they're not as good as Google. SearX is the most private one, but there's also Duckduckgo and Startpage.
3. The dark web is literally the Internet from the 90s. It's not feasible to completely switch over to it, but it's way more anonymous than the regular internet, and is a gold mine of 90s nostalgia, strange articles, red pill knowledge and tons more. I'm sure illegal/creepy stuff exists if you search for it, but it's nowhere near as bad as hollywood and buzzfeed make it out to be.
4. There's this thing called energized.pro. It's a document that blocks the domains of every popular tracker and then some. So when you browse the Internet, google trackers and stuff won't send data to Google analytics cause energized.pro blocks your computer from sending network traffic to them.
5. Always lie to employers and co-workers about not having social media. If you have social media with your name and face, either change it or delete it.
6. The best way is to just avoid using social media and technology as much as possible. Just use it when it's absolutely necessary such as researching stuff, news and applying for jobs.
You'll have to Google more info on this stuff, I'm just keeping this comment concise.

I have never even had an Instagram or Twitter account. I have had 2 Facebook accounts, the latter of which I have deleted but the first one was linked to an old email address of mine which was hacked into around 2013. I don't know to get rid of that one. Other than that I only have a Youtube google account, Gmail and Patreon.

I turn 50 this year so I perhaps identify with what you're saying more than most of the group. The internet back in the day was the wild wild west. There was no way to cancel anyone or censor them. It was an adventure and sometimes even a little disturbing. But watching what is happening now to the system that was intended for freedom of speech and Non-censorship is truly Orwellian. As the saying goes 'You don't have to take people's freedoms away from them. They will give you them in exchange for a little bit of safety. To steal a second favorite quote ' Those who would trade liberty for safety deserve neither. Great lesson lets hope they pay attention. BTW Proton mail is already being denied as an email address. One thing I will add is that both Microsoft and Google do not provide free email services. Check the agreement you sign people. They are a third part and store your data on their servers. Breaking news has already informed the public that the American Government will be censoring and accessing people's cell phone messages to KEEP PEOPLE SAFE from UNAUTHORIZED medical data on COVID 19. Pretty soon if you speak out against the machine it will crush you. CRP check out the WEFs new branch 'Cyber Polygon'. Online anonymity? Let's not be naive. We all have an online avatar that is somehow linked to a real identity - be it email account, credit card and so on. Apps and platforms can figure out who you are from the way that you type or move your mouse, from the content that you consume and so on. It's impossible to use the internet and stay hidden. Everything that you do online can be tracked back to you, no matter what burner phones you're using.

This is a good video coach, but you didnt even talk about doxxing. It's so relevant nowadays because it's mostly the way people use it to intimidate you, and the efforts people go to find your personal information is crazy, remember, your "troll" account wont have anything tied to you, unless it was paid by cash. And even then a simple IP slip can expose you. (Also assume the government already can and does track you)

I read a book called Digital Minimalism by Cal Newport. I decided I didn’t need any social media, and like Coach says I was wasting too much time on it. I deleted all my SM accounts and I don’t regret it at all. This may not be right for everyone but it’s better for me.

You can use such a site as a blog, as a place to share your photos, and as a place to host your CV. People "friend" you by subscribing to your RSS.

Yes , this is true. My friend was fired from my work place just because he told to managers that he didn't feel good today for work. Later in the day , 4h later he posted a story in the town doing some shopping. The next day recive his P45 and all of his money for entire month and was gone. Manager was angry because we have some busy days now , and he is having fun.

I got out of social media a year ago this month… I started sharing my disgust with the political world and how liberals were just wrong about almost everything. Then i started looking at my own posts and realizing I’m becoming an extremist. I hated seeing my page become a political page. I have ghost pages where its all completely blank but other than that I’m about to delete my twitter too cause thats the worst platform of them all.

Email is inherently unsafe. Inter-email (e.g. between gmail and yahoo) is sent in plain text on the internet with sender and receiver IP address and some times with machine name too. All this is Zucked by ISPs and 3-letter agencies. E-mail is the equivalent of sending a postcard.
