You can also "see" darkness, in that seeing is the act of perceiving with your eyes, and when you can see nothing, that means there must be no light and, therefore, that it is dark. Also, shadows don't love darkness, as they need light to exist, whereas at night, small light sources abound, creating many more shadows than a single source can, even one as bright as the sun. Shopkeeps don't care about the dark -- they can light lanterns easily enough to ward it off -- whereas they hate the night time when most people are asleep and unable to shop, so sales drop to the point where most don't bother being open at night. And while thieves may love shadows, shadows don't care about thieves.
