Orange Soda

The next video is in production, and we'll be talking about orange soda. Citrus sodas, including lemon, lime, orange and grapefruit can be difficult to make and keep stable, so we'll deal with that. 

Did you know that most citrus-based sodas are bottled at a pH of around 3.0? That's because a lower pH will cause the oils to develop off flavours over a period of about six months, and bottlers want shelf-stable products. However, this leaves open a door, especially for bartenders and soda fountain operators, to make a more acidic soda, and it is a fact that people like the bite of a lower pH (2.0) drink. Think Daiquiri, Whisky Sour and the Margarita.

Vodka doesn't have a high enough ABV for orange oils as they are high in terpenes (95%), and you will find it separates out. Propylene glycol isn't much better at dissolving orange oil.

Hello! Im curious about what would happen if I use vodka instead of high proof alcohol (its hard to get where i live). Is it possible to substitute it for propilenglicol or a mixture of vodka/propilenglicol/glycerine?

There is no Vitamin C in the essential oils so you should be fine and you can add sodium benzoate.

I'm going to make Orange, Mandarin, Grapefruit and Bergamor Syrup Essences, can i add Benzoate solution to the syrup? Or in the essential oils of this citrus has vitamin C that can be a problem when mixing because of the benzenes that can be formed in the mix?

This was my second soda syrup. I made the Wild Cherry using the "Fix the Pumps" recipe and it was kinda of flat, so I'll have to tinker around and see if I can round out the flavor. The orange soda, on the other hand, is delicious. Big hit with the family. I used Sweet Orange oil from the first supplier on your list, and it's perfect!

I know we aren’t talking about the same kind of product…. But I would HIGHLY recommend you give Kevin Kos’ orange super juice a try. He acidulates it to the approximate pH of a lime, and it makes a KILLER soda. 1oz super juice,1oz simple syrup, 8-10oz seltzer. Adjust to taste. VERY yummy.

Allulose is about 70% as sweet as table sugar, so you can add a touch of Truvia or Splenda (both rate high in the tastes good category). And if you like sweet stuff, go for it. This is a no-judgment zone, drink whatever makes you happy.

So for those of us with no real background / understanding in chemistry, what would help to make out sodas sweeter, if we unfortunately still have that child-like sweet tooth (though I'll be using low calorie sugars like the Allulose you mentioned)?
