For elderflower it may be that the floral aromas are extracted with a high proportion of water. Vanilla is like this, only using 35% or less abv. Try doing a small extraction with just water and sugar and see how it tastes.

Do you ever need to use heat to make an extract? The only reason I'm asking is I'm trying to make an Elderflower extract from fresh elderflower and all of the syrup recipes use boiling water. The extract I've made so far is quite green and non floral. Thanks in advance 😊

I have a video planned about using isopropyl alcohol and it is safe and is a better solvent than ethanol, and I've used it before. Many years ago soda manufacturers request to use it because it does work better. The only issue is that some countries limit the amount of iso-propyl alcohol in beverages, but if you follow the standard instructions on how to make an Essence, the IPA concent is less around 600 to 800 ppm, so very low.

Hello, sorry for the delay, this question is more complicated then it seems. The problem is that there is limited data on glycerin extracts of cumin. With alcohol, you can estimate a complete extraction of the oils, but even then, knowing the quantity of oil extracted is difficult, but with an essence, we know exactly. But, an extract can be assumed to be somewhere around 50% of an essential oil essence. Now, with glycerin the solubility of oils is going to be much less, so maybe 10%? Though I'm not sure. But it won't be stronger than an alcohol extract so you could probably use 4 to 5 times as much as other essences or extracts. But the best thing to do is get the flavour to a point where it tastes good to you and that will work without the math.
