Info Sheet: Zero Calorie Simple Syrup

A bit delayed but the information/instruction sheet for the Zero Calorie Simple Syrup video is here (see PDF attachment below). The instructions include the formula for each individual component and then the final mixture to preserve the syrup. 

If you are making this syrup and using it quickly, less than a week, you can skip the preservatives and just keep it in the fridge, though adjusting the pH to 4.0 using the buffer mixture is still helpful and doesn't affect the taste significantly, though improves preservation life.

Citric acid helps reduce specific issues, like botulism, but it won't prevent fermentation or other bacterial spoilage. But if you are using it fairly quickly, then there won't be an issue. As for tannins, whatever is convenient, feel free to do. There is no one specific way to do stuff, there are lots of ways.

I didn’t have the preservative you called for to add to the tannin solution so I just added some citric acid instead since I was just planning to use what I needed in the energy drink batch I was making right then anyway. Is citric acid a viable substitute or will it cause problems? Do you think it would be better to just add diluted tannins directly into the energy drink syrup or should I still make the full separate tannin solution each time?

I can't find where you buy your tannins for zero calorie simple syrup. Amazon sells North Mountain wine tannin. Would that work nicely? Thanks.
