DIY Diet Cola

Making a diet cola is just as easy as making a regular cola. I've created a low calorie syrup-base with the acids and other components combined. It is similar to the Zero Calorie Simple Syrup, except this one is closer to 1:1 and not the 2:1 sweetness of the zero calorie version. This one also incorporates some sugar, as it can give a quick hit of sweetness, but we can still keep the calorie content below 30 calories. The formula sheet is attached as a PDF below.

The cola emulsion can be the same one from the How to Make Cola video, or you can use any flavour profile with this syrup base.

And as usual, everything can be adjusted to your specific taste, my formulas are a starting point and never the final word. If you have questions, post them below.

What is the best combination of zero/low-calorie sweeteners for a soda syrup that is considered natural and that has the closest sweetness to sugar? I was thinking of trying monk fruit and allulose, but am a novice at this. Thanks! Also, just wanted to say that your resources are super helpful.

You can just substitute the Zero Calorie Syrup formula I published for the simple syrup in the Dr Pepper formula. I made the Zero Calorie Syrup as a direct 1:1 replacement.

Can you use this recipe to make a diet Dr Pepper? Maybe in a future episode?

It was just to demonstrate that you can switch out different acids to get different flavours, or for people who don't want to use phosphoric acid. You can use phosphoric if you want.

Is there a reason why you use more citric acid and no phosphoric acid in this recipe?
