Week Off: Gone Canoeing

This week I will be away, deep in the woods of Algonquin Park, so if you have any questions, I will answer them when I get back to civilization.

I do have some topics in the queue, and here is the short list of ones that are presently in the works:

1. Grapefruit Soda using the emulsion technique, along with flavour compounds

2. How to Make Caramel Type IV for colouring and emulsification

3. A discussion video on shelf-stability, which is the current #1 question I get.

4. Alternative Preservatives, like Nisin and Polylysine

5. Non-Caloric Sweeteners, I get a lot of questions about stevia, monk fruit and others.

6. Grape Soda - the classic 1950s flavoured version.

7. Irn Bru

8. Clear Malt Beverages

9. Non-Alcoholic Gin - this one is tricky, but being worked on.

10. And a bunch of flavour videos, like Crystal Cola and Old Spice cola.

Feel free to add requests in the comment section, my current list of topics is at 665. Whenever I get an idea or find some interesting recipe, patent or research paper I add it to a Notion database and it just keeps growing. But if you want to see something, I probably have something related in the list, so speak up.

And as usual, if you've sent me a question but I haven't replied it usually means it got lost somewhere or I missed it. Often due to me checking messages on my phone and forgetting to flag them for a response. So just resend them and I will get you a response.

A good trip was had, thanks. You check out The Good Scent Company site using this seach tool: https://www.perfumersearch.com/TGSC.html for compounds. The owner of the site died a few years ago so it is slowly degrading. You can also checkout companies, like https://fraterworks.com/collections/latest-arrivals that provide some hyped aromas/tastes. Not everything is approved for food/beverage, but for the ones that are you can get the descriptions.

I hope you've had a great holiday! One question if you have the time: where is a good place to look for figuring out what esters and terpenes actually smell and taste like? Years ago I had an apple soda at the coca-cola museum and fell in love with it but haven't seen anything like it since. Thanks!

You can combine everything into the keg and carbonate it just like beer, old soda fountains did this for popular beverages, like root beer and ginger beer. I can add a video to the queue as I need to finish off a few things on the carbonation series. Cheers

Darcy- I know you have covered a similar topic previously on carbonating water for an on tap system, but I would like to see how to force carbonate a corny keg with soda syrup and water. I know you can add the syrup to seltzer water, but I like the idea of having the entire system on tap in a restaurant setting which only requires someone to pull a handle rather than make a mixed drink. I operate a fast pace fast-food restaurant of sorts and would love to see any suggestions to carbonating the entire mix and having it ready to go on tap. Thank you
