The town, Armadillo, is the first town you step foot in in Rdr1. During and after the epilogue you have full access to the desert, but not Mexico

One of my favourite side stories is the gunslinger side missions, head over to the smaller saloon in valentine to start it. I think it’s one of the best written side missions. Other side story’s are also only available in certain parts of the main story and if you miss them you have to play them later with John.
