Our boys only stand a chance now because they got very lucky to have a fridge with cold drinks. If Stardust Crusaders were on the train and they were Prosciutto's target, they'd all be dead. The Morioh gang might stand a chance because of Josuke - maybe his stand could reverse the aging somehow. Also - Abbacchio's hand got reattached by Bruno - you could see zipper marks on his hand. He did that just like he attached that druggie's arm to his torso in the 2nd episode.

While keeping the door open would offer cool air momentarily, a refrigerator needs electrical power to work. Meaning there is power dissipation in the form of heat (because no system is 100% efficient). Which, if that room is reasonably insulated (thermally), means that the room will eventually heat up due to the fridge having to work extra hard to keep its inside cool. Thermodynamics are a bitch.
