The keel is connected to the rest of the ship. If it gets replaced, everything else has to be. Then it's not the same ship.

The keel of the ship is like it's spine. All of the ribbing of the ship is connected to that one length of wood. You can't replace the keel without taking apart the whole ship, and putting in a new keel with different wood grain and shape will not articulate to the old ribbing in the same way, so you'd need to get new wood, which is basically a brand new ship.
