It's overall very funny that the reason Toriyama has originally decided to age up Goku - allegedly - was that the kid body limited what Goku can do in fights and was annoying to draw, as the show became more and more battle oriented, Toriyama felt it will be easier to age Goku up into an adult, and he fought his own editors every step of the way to make it happen. What is funny about that is that - both the Original Dragon Ball, and Dragon Ball Daima - the shows with kid Goku - have so much better animation than Dragon Ball Z and Dragon Ball Super - where Goku is an adult ^^ EDIT : Also for the Super Saiyan transformations, Toriyama liked keeping his world building vague, as he anways wrote by the seat of his pants, rarely planned ahead and his editors would constantly change whatever he wanted to do, one thing that was established was that the original Super Saiyan transformation would increase the power level by an absolutely insane 50 times, later forms didn't get any numbers associated as the show overall moved away from numbers by that point, the trade off would be general fatigue and power consumption, although Goku has later on mastered Super Saiyan 1 to the point where he could use it without energy loss. But higher forms would still be draining. Now - here is my headcanon, there are two cases where we see very interesting results of super saiyan 1) when Goku had a heart virus, going super saiyan sped up the infection 2) when Goku was dead and returned to Earth for 24 hours, SSJ3 reduced his time on earth by multiple hours in mere minutes. I believe, the way super saiyan works is not just that it burns your energy, I think it speeds up your entire life processes. So your heart beats faster, you burn calories faster, cells die and are rebuilt faster - this would increase the amount of power you have in the moment, but shorten your life span / age you up. Of course Toriyama never stated that and now will never be able to confirm or deny, but the fact that Goku "lost" time on Earth by transforming always stuck out to me

The in-universe reason for them not going SSJ immediately is because the Saiyans are a warrior-race. They enjoy the fight and they often treat the pre-transformation period as a warm up/to get into it. As for energy consumption, while we can assume they use more energy, only SSJ3 has been confirmed to expend a large amount of energy. For level 1 and 2 I don't think anything's ever been said regarding energy usage, but... it is hard to maintain constantly. And yes, both Gohan and Goku at the very least are capable of staying in SSJ1 permanently, though I won't spoil the specifics in case you ever decide to watch DBZ (or the shortened Kai version). Well I'm assuming the other saiyans also managed to catch up, but only for these 2 it was confirmed. Also I really love the action in Daima. This and Solo Leveling to me have the most enjoyable action scenes of anime this season. And while Solo Leveling wins in terms of cool factor, I think DBD manages to deliver the better scenes with so many creative shots. There's just so many nice shorts I've not seen in any other anime before.
