If you remember Yura from hidden sand, he had no memory of being a spy but when Sasori broke the jutsu, they showed the seal in his brain being released and he was shaken by it (just like Kabuto describes the sensation). After the jutsu broke, Yura remembered that he was a sleeper spy and went on to murder the entire squad that was guarding the entrance to hidden sand. Kabuto was a sleeper just like Yura, if you remember back in OG series, Orochimaru was suspecting Kabuto but didn't know if Kabuto himself knew. He told him once "if you want to stop me you have to kill Sasuke while he's in hospital" and then said he was joking or something. After Kabuto didn't do it, I think he confirmed it there and broke Sasori's jutsu and gave him his free will back. Also you asked why would Sasori go after Orochimaru, well they were partners before he defected and Deidara joined so it's his responsibility to eliminate Orochimaru but he's using spies because Orochimaru is very difficult to catch, even for the Akatsuki. Orochimaru basically scammed the Akatsuki so no wonder they want him dead.
