They do serve some sort of purpose. And it pretty much did. In case there's an intruder searching for something, a maze like that will make them (intruders) lose a lot of time and risk the chance to fall on Sasuke/Orochimaru by mistake. It would be a dumb move to have a little hideout.

Yes, the lizard eating a wasp symbolises that Orochimaru might kill Naruto and the others if he sees them in his lair. You will see a lot of symbolism like this in the future. For example, the serpent usually symbolises Orochimaru and the hawk symbolises Sasuke.
