The sphynx saying "gomen" (sorry ramen) was a pun, it means "sorry" but could also be "gomenasai ramen", like shiomen (salt ramen). Also when "Saldeath" introduces himself saying "watashi wa Saldeath", his name sounds like "saru-desu", which means "monkey", so "I'm a monkey", thus Luffy proceeds to say "Really? You don't look like a monkey". I think they translated as "Salmon" because it sounds like Saldeath too, if it used the actual translation "monkey" people may not get it (btw I don't speak Japanese, they used to put notes explaining jokes on top).
