I think the end of the conversation with Annerose wasn't Cid showing that he can also crack his neck, it seemed more like he was tilting it to kinda glance back at her and it just cracked. So it seems to me, he just dodged the strike but his neck happened to crack which made Annerose think he just cracked his neck, which would explain why he is completely confused what she was trying to do or show when she proudly cracked her neck in front of him.

"nicht sehen" would be directly translated to "not seeing". So her Name means Anarose NotSeeing, which is a funny double meaning considering that she is good enough to see a lot of Cid's moves but at the same time does not see how strong he really is, especially when you consider her introduction where she tries to save Mundane Mann because he looks so weak.
